I don't think the Hebrews had surnames. They had a personal name, plus who they were the son of or where they were from. Joseph would have been something like Joseph of Nazareth or Joseph son of Jacob.

Instead of a surname the Aramaic word bar (son) was followed by the name of a man's father therefore he would have been Joseph bar Jacob.
