Talking Hangi

A hangi is a traditional moari (NZ) way of cooking for large numbers of people basically it is a steam oven in the ground.
You dig a big pit, place untreated wood in the pit let it burn (we cheat and add a bit of iron to get it really hot)and then push the embers down. Then you layer the food (already prepared and wrapped in tinfoil)until the pit is full and place turf or sacks to keep the warmth in and let mother nature do her thing for a few hours.

It is really nice when it is done well and awful if it is done even slightly wrong

Now I have gone and made myself hungry...lol
