Good Cook-Top Habits
Foods may actually cook better on low heat and make less mess. You need high heat only to bring foods to a boil. Using a larger pan when cooking foods that foam---paata, rice, milk, dried beans---will help to keep them from boiling up and overflowing.
When fryting or sauteing, use a small amount of fat and medium heat to minimize spattering and to brown food smore evenly. Keep an eye on all food while it's cooking. If you must walk away, set a kitchen timer and carry it with you. GOOD OVEN HABITS To keep oven cleaning to a minimum, use a low temperature when cooking uncovered meats and poultry. There is less spattering, shrinkage is minimized, and the food will be juicy and flavorful. To prevent boil-overs do not fill pans too full. Place a sheet of aluminum foil below the pan on a low rackto catch any drips. (Do ot cover the entire rack with aluminum foil; it may affect browning.) When using glass and glass-ceramic cookware, which absorb heat, set teh oven thermostat 25 degrees lower then you would for metal cookware. |
