Olive oil's disease-fighting antioxidants start to deteriorate right after bottling. To get the most benefit from this healthy oil, be sure to store it away from light, and buy it in small bottles you'll use within 2 months. And don't worry if the oil becomes cloudy in the fridge. That's normal and doesn't affect taste.
