If you want the most vitamin C from your bell peppers, munch on red ones.

A recent study revealed that mature red bell peppers have higher levels of vitamin C compared to green ones. Vitamin C is an important antioxident vitamin that can reduce arterial aging and boost immune system function. In addition to bell peppers, other super vitamin C sources inslude orange juice and strawberries.

I read somewhere that bell peppers are THE most nutritious vegetable there is. I munch on them raw whenever I can. And I concur on the recommendation to eat red ones (orange and yellow, too) because it's so important to get a variety of living colors in your diet! Saturday night I sliced up a gorgeous red bell pepper and added them to our fajitas. Unfortunately, my 10-year-old picked them all out (there were pretty easy to spot).

Sigh.

(That's one reason I have to make sure we supplement our veggies!)
