This is one I found in an earlier post and it is a low fat recipe.

6 oz Cooked Mashed potato
8 oz of Plain flour (all purpose flour)
a pinch of salt
3 oz Butter or Margarine
water to mix
Method :- Mix the salt into the flour and rub in the butter.
Add the Mashed potato and mix well.
pour in just enough water to make a stiff dough.
Roll the dough out on a well-floured board, to about
1 inch thickness and cut into small rounds with a
pastry cutter.
Bake at 450F. for about 10 minutes or until nicely brown.
These scones should be split and served with butter.
