I'm big on creativity in the kitchen, as a matter of fact I am gainfully employed as a chef. My favorite pasttime, though, is coming up with my own recipes. Try this one out:

The "P" Platter

4 large Pork Chops
1 cup chopped Thyme
2 medium cloves Garlic
4 Lemons
1 cup(+/-) Olive Oil
4 large Parsnips
4 large Pears
6 large Potatoes

Arrange the pork chops on a baking tray or pan, score (cut shallow strips)the top. Place the thyme, garlic and lemon zest (peel stips of the rine off of one of the lemons in 1/16 inch wide by 1/2 inch long strips) in a bowl to be pulverized. Add oil mix well, should look similar to a pesto sauce. Rub Pesto into pork chops. Cut parsnips and pears into 1/4's lengthwise, cut potatoes into 1/4 inch chips, arrange and toss with pork chops to evenly coat with drippings of excess pesto. Squeeze lemons onto everything. Bake at 250 for 60-75 minutes, if not done at 60 check every 3 minutes will be done after at 75.

Enjoy.
