Sweet Potato Wedges(spicy)

4 Large Sweet Potatoes(scrubbed)
2 Tblsp. Olive Oil
1/2 tsp. Ground Cumin
1/2 Tsp. Ground Coriander
9oz.(250g) Cottage Cheese
Pinch/Dash Chilli Flakes/Tabasco
1 Spring Onion(finely chopped)
1 Tblsp. Fresh Coriander

Heat grill up.

Pierce the sweet potatoes with fork all over and cook in microwave for
5 minutes(on high) until tender.Then cut into chunky wedges.

Mix together the cumin, ground coriander and oil, brush this onto the skins
and grill for 3-4 minutes, both sides.

Mix together the onions, fresh coriander, cottage cheese and
chilli/tabasco also add seasoning if required.

Put this mixture into a small bowl and dip in the potato wedges while
they are still hot.
