2oz. Margarine
4oz. Sugar
2 Eggs(separated)
3oz. Self Raising Flour
Juice from 1 Large Lemon
Zest from 1 Large Lemon(grated)
1/2pt. Milk

Oven temp. 350 F/180 C/Gas Mark 4

Place margarine,sugar,egg yolks,flour, lemon juice and milk into a liquidizer
and mix until blended well together. Then put into a large bowl.

Beat the egg whites until stiff and and fold into blended mixture.

Then put the mixture into a well greased 1.5pt. pie dish. Stand in a
meat tin with water that comes halfway up the side of the dish.

Bake until the sponge is a pele golden colour and the sponge is just
firm.
