This is disappointing isnt anyone planning ice-cream for the long hot
summer we are going go have.

I just got a weights and measurements converter, so sure, its hard to cook here with your recipes so now I can bake away! Is that gas mark a european or british thing? we use high, med, low marks. hint, never add extra sugar to a sorbet recipie or it won't freeze!

Last night in an Indian restaurant I tried black pepper ice cream! It was vanilla ice cream with coarsely cracked black peppercorns in it and it was utterly gorgeous... the combination of the spicy pepper & sweet vanilla went well together... weird as it sounds!

Post Melon Sorbet

Try this one.

2lbs. Melon
4 Egg Whites
4oz. Caster Sugar
Juice of half a Lemon

Remove rind and seeds from the melon and cut into chunks.
Put into food processor with the lemon juice and blend until
smooth.
Pour into a freezable container and freeze until the edges of the mixture
go hard.
Remove from freezer and put into large chilled bowl.
Beat the egg
whites until stiff and then whisk in the sugar until mixture is
shiny and stiff.
Whisk the melon mixture again and fold the egg white mixture into it.
Return all the mixture to the container and freeze for about three hours.
Allow to stand for about ten minutes and serve.

Serves 6-8 people
