Chocolate and Pecan Meringues

This recipe does take a while but the result is worth waiting for,
try it for a special occasion.




4 Egg Whites
1.5mls - 1/4 Tsp Cream of Tartar
10mls. - 2 Tsp. Vanilla Essence
225g. - 8oz. Granulated Sugar
90g. - Pecans(chopped and toasted)
175g. - 6oz. Chocolate Chips

Oven Temp. 110 C/225 F/Gas Mark 1/4

Using electric mixer beat up egg whites and cream of tartar until peaks form,then add the sugar(small amounts at a time)and keep beating for about one minute with every addition(this should take about 15 mins).
When all added beat for another 4 minutes until mixture is very stiff.
Beat in the vanilla essence, then fold in the nuts and chocolate chips.

Have ready two lined baking sheets(line with foil).Using one tablespoon of mixture mould into a ball and then place on tray and form the top into a peak.

Bake for about two hours, then turn oven off but leave the meringues in the oven to go cold(about one hour).

Store in an airtight container.

Babz, I absolutely LOVE meringues, and this recipe sounds absolutely wonderful. Have you also tried making them with peppermint extract (instead of vanilla) and adding chocolate chips? Talk about to die for!

The only time I like pepermint is in chocolate (Aero's)

At moment I am into Almond flavours !!
