One I have been having lately....


Parboil some potatoes then allow to cool.

Slice them and layer in an ovenproof dish with

SlicedMushrooms
SlicedOnion
SlicedPeppers

Pour a White Sauce onto this and leave while

You cook some Pasta to top it with.

Then cover that with White Sauce

Then arrange Sliced Tomatoes on top and put in
medium heat oven for about 20 - 25 mins.

Serve immediately !!

For Hubby I make him a separate one with cooked
cubed meat in !!

There are some old familiar names in the early part of this thread!!

I boil new potatoes, then drain/dry them.
Heat olive oil in a frying pan, fry a chopped onion and a couple of garlic cloves in the oil.
Slice or cut the tatties into chunks, and place cut side down in the hot oil... i do it like this so that they get nice and brown and crispy on the cut side.
Leave them like that for awhile... maybe 5 minutes, to make sure they are brown and crispy, then stir the whole lot together, adding sliced black olives, a sprinkle of chilli flakes, salt & pepper.

I sometimes make this for breakfast, frying bacon with the onions before adding the potatoes, etc.
