Makes 15 Biscuits/Cookies
100g. - 4oz. Butter
50g. - 2oz. Caster Sugar
100g - 4oz. Plain Flour
50g. - 2oz. Ground Rice
Demerara Sugar
Oven Temp. 190 C/375 F/Gas Mark 5
Cream together the butter and caster sugar until fluffy and light, add the flour
and ground rice and mix well using your hands and knead the mixture together.
Roll into a sausage shape and roll into the demerara sugar, making sure that all
shortbread mixture is coated.
Cut into 15 slices and put on a greased baking sheet and bake for about
15 minutes until golden brown.
