I have found a very good book that has fat-free and low-fat desserts, so if anyone
wants any, ask and I will see if I can find a recipe for your needs.

Babz, are you still willing to post some low-fat/fat-free desserts? I'd love to check them out, as I'd like to serve some healthier ones for my daughter Susan and myself. Thanks so much, sweetie!

Low Fat Sherry Trifle

Serves 4

1 packet sugar-free jelly
2 sherry glasses sweet sherry
2 medium bananas, peeled and sliced
1 425g (15 oz) carton low fat custard
2 150g (5 oz) virtually fat-free vanilla flavoured yoghurts
strawberry slices and lime zest to decorate (optional)

Make up the jelly in a large dish according to the packet instructions, but substitute 2 glasses
of sweet sherry for 120ml (4 fl oz) water. Divide the jelly between 4 individual dishes, add
the bananas and leave to set.

When set, cover each with the low-fat custard and smooth the yoghurt over the top.
Decorate with strawberry slices.

Mocha Meringues

Serves 4

4 meringue nests
2 tablespoons cornflour
200ml (7 fl oz) skimmed milk
25g (1 oz) plain chocolate, chopped
1½ teaspoons sugar
1 egg white
2 tangerines, peeled and sliced

Blend the cornflour with the milk in a saucepan, add the chocolate and sugar, and bring to
the boil, stirring until thickened.
Cover to prevent a skin forming and leave to cool.
Whisk the egg white until stiff, whisk the cold filling, and fold the two together.
Fill the meringues nests with the tangerines and chocolate mixture shortly before serving.

Saucepan Brownies

These are called saucepan brownies because the original used a stick
of butter which
was melted in a saucepan.
The texture of these brownies is more cakelike than fudgelike.

Mix in one bowl:
1/2 c. flour
1/3 c. cocoa
1/4 t. baking powder
1/4 t. salt

In separate bowl mix:
1/2 c. pureed prunes (a 4 oz jar of baby food prunes is perfect)
2/3 c. sugar
1 t. vanilla
2 egg equivalents.

Add dry to wet.
Put in 8 inch square pan.
Bake at 350F for 20-25 minutes or until edges look dry and start
to pull away from the pan.
