This is a recipe I found a while ago and I hope that you will try it.

This one I have done in US Ingredients(I hope!)

Makes 25-30

4 Cups Sifted Flour
1/2 Cup Butter
2 Heaped Tblsps. Sugar
2 Tblsps. Honey
2 Egg Yolks
1-1.5 Tsps. Baking Powder
1 Cup Milk
Pinch Salt(optional)
1 Egg White
1 Cup Thick Heather Honey
3 Tblsp. Ground Almonds

Rub the butter into the flour.

Heat sugar and honey gentley until well mixed, then add baking powder, add this to the flour alternating it with the egg yolks which have to beaten up with the milk. make sure that all ingredients are well mixed. Add the salt and mix again(.

Roll out onto floured board and cut into cookie shapes.
Place onto greased cookie sheet and cook for about 20 minutes.

Remove and put on cooling rack where you should paint the tops with the beaten egg white.
Mix the Thick Honey with the almonds and spread over the top of the cookies.
Return the cookies to a very cool oven for about 5 minutes to set the honey.
Eat when cold.

Although I said salt is optional they do taste better with it.

dear Babz ,thought you might like this recipe for honey oat bars.
1 cup of rolled oats.
1 cup of saltanas
1/2 cup of wholemeal flour S.R.
1/2 cup of raw sugar
1/2 cup of coconut
5oz of butter
1 tablespoon of butter.
combine oats,sultanas,flour,sugar and coconut in bowl.Melt butter and honey add to dry ingriedents.pressover base of tin 11"x7".lined with foil.Bake in moderate 15to20min or until golden brown.Cut into bars while hot remove from tin when cold .Enjoy.Jackie
