Oatmeal First

I am starting you off with Oatmeal first, the staple food of the Olden Days.


Am working on the different weights from the UK to US, have nearly got them done.

OATCAKES

4oz.(200g.) Oatmeal
1/2oz.(15g.) Bacon Fat
1/2 teaspoon(3ml.) Baking Powder
Pinch Salt
Hot Water

Mix all dry ingredients together.
Melt the fat and rub into the oatmeal mixture.
Add little of the water to bind mimxture together to
a soft consistency.
Knead well and roll into a round on a well oatmealed board.
Cut into four and bake on a hot gridle. A very heavy bottomed pan will be okay to use.
When one side is cooked, put into a cool oven for the other side to dry out.
Eat when cold.



Janet you can leave out the salt but it does not taste as good.



OATMEAL BANNOCKS

3oz.(75g.) Fine Oatmeal
1oz.(25g.) Self Raising Flour
1oz.(25g.) Butter
Pinch of Bicarbonate of Soda
Warm Water

Mix all dry ingredients together and then rub in the butter.
Mix in a little water to a stiff consistency.
Turn onto oatmealed board and work into a round shape.
Roll out on to a thickness of 1/4"(.5cm).
Keep the dough well floured with oatmeal so that it does not stick.
Form in to a round with a plate.
Sprinkle with oatmeal and cook on a warm gridle until the ends begin to curl.
Then turn and cook on other side.
When cooked cut into four.

Don't make more than one amount of this mixture as will go too hard for cooking.
