Question

My parents and I immigrated to Canada when I was just a tot and I recently discovered this site. I am enjoying reading all the items and news here and I am hoping someone can help my mom out with a recipe she is looking for.
She said it was called Russian Toffee, although it was a Scottish recipe - the only ingredient she can recall - it was made with sweetened condensed milk and she remembers that it was a brown colour when it was finished. I hope someone can supply me with this recipe - I would love to surprise her with it. Many thanks in advance and wishing you all a Happy New Year!

Hello Lainie: Was it treacle toffee - however I don't think condensed milk is an ingredient. How about tablet - see this website posted by one of the other members which has both those recipes..Good luck http://www.scottish-recipes.co.uk/

Have some Recipes

I couldnot find any recipes but good old mum and dad did so here goes. I will do them separately as I have already done them together and they are floating around in the ethos somewhere!
All English Weights
Recipe 1

1 lb. Sugar
2 Tablespoons Syrup
4 oz.Butter
1 Tin Condensed Milk
1 Teacup Water
Vanilla Essence(No amount given)

Boil the sugar, syrup and water together for 20 minutes stirring constantly, make sure that the syrup has disolved before reaching boiling point.Now add the butter and condensed milk and continue to boil for a short while. Test by dropping a small amount in a saucer of cold water, the mixture should be chewy. When at that stage take off the boil and add the vanilla essence, beat in well. Put into a greased tin and when cool cut into squares. When cold break into squares.

You will have to change the weights into your own countries weights, most cook books and good diaries have the eqivalant measures in them.

Recipe No. 2

Russian Toffee 2

2 Cups Sugar
1 Tablespoon Syrup
2 oz. Butter
1 Tin Condensed Milk
1 Tablespoon Redcurrant or Raspberry Jelly

Rinse pan out with cold water.Put in the sugar, syrup, butter and jelly. Stir constantly until nearly boiling and then add the milk, boil, still stirring(for about 20 minutes). Test as in other recipe if okay put in greased tin and allow to cool and cut into squares.
When cold break into the squares.

Russian Toffee No. 3

This one sounds the easiest.

1/4 lb. Brown Sugar
1/4 lb. Butter
1/4 lb. White Sugar
2 Tablespoons Cream
1 Tablespoon Syrup
Vanilla Essence

Melt the butter in a pan, then add the other ingredients except the vanilla. Boil briskly and stir until the mixture sets as in the saucer test as the other recipes. Take off the boil and beat in vanilla essence. Put into greased tin and cut into squares when cool.

All of these toffees can be wrapped in waxed paper when cold.
