Thanks to all who helped make my roast beef and Yorkshire pudding a success! Covering the roast with foil for the last 45 min. at the 450 degrees needed to bake the pudding worked out just fine - meat stayed nice and rare. P.S. - I ordered a Sticky Toffee Pudding from the Williams Sonoma catalogue, and it was delicious, though rather expensive. Next time, I'll try to make my own from the posted recipe.
