Clotted cream
I had a couple of recipes for both real and imitation clotted cream - will see if I can find them for you.

Clotted Cream
I made clotted cream (the real stuff) once, but cannot find the recipe - it was made by slowly simmering whole milk for a very, very long time, then letting it stand - it tasted great, but a lot of milk resulted in a very small amount of clotted cream. You can probably find a recipe on-line or in a British cookbook - try the library. But here's my recipe for "Mock Devonshire Cream" - ridiculously easy to prepare:
One 3-oz. pkg. of cream cheese, softened 1/4 C light cream In a small bowl, beat the cream cheese and cream together at medium speed until smooth and fluffy. Makes 1/2 C. Not the real thing, but not bad. There's a mail order company (Wolferman's)that sells British foods, and I buy jars of Devon Cream from them. Check out their website - http://www.wolfermans.com Again, it's not like having it freash from Britain, but it's a pretty good substitute. Enjoy! |
