Butterscotch Pie

Tried this recipe this afternoon, found it in my grannies cookbook.

Oven temperature 300 F Gas mark 2

4 oz. shortcrust pastry
3 oz. soft brown sugar
1 oz. butter
1 oz. plain flour
1 egg yolk
3 tablespoons water
5 fl.oz. milk
1 tsp. vanilla essence

Meringue Topping
2 oz. castor sugar
1 egg white

Method

Line flan tin with the pastry and bake blind.
Mix the flour and sugar together and add the water, mix to a paste. Heat milk and pour onto mixture, add the butter and mix well.
Return mixture to pan and slowly heat until it goes thick stirring so it does not stick.
Remove from heat and add vanilla.
Separate the egg yolk and add to mixture beat it in well. Pour into pastry case.
Whisk the egg white until it forms peaks, fold in the castor sugar.
Pile the meringue on the top of the pie and bake until browned. 20 to 30 mins.

Leave to go cold before eating.

Enjoy!


Ate some of this last night and decided that there was not enough butterscotch filling in it, so my next one will have double the amount.
