Macaroni and cheese would have to be Susan (my daughter's) favorite food, second only to pepperoni pizza. She also loves an Oriental rice & tofu dish I occasionally make, a leftover from our veggie days. Take a pre-packaged box of Oriental-flavored rice mix and a pound of tofu. Wash and cube the tofu, fry in olive oil and sprinkle soy sauce and worcestershire sauce on it to taste, and fry until golden brown, even a bit crispy. Set aside. Prepare rice mix according to package directions, adding the fried tofu to it while the full amount of liquid is still present. The Oriental seasoning in the rice mix adds a very nice flavor to the already-seasoned tofu cubes, and it adds protein to go with the rice. It's actually something I created, which is highly unusual. Typically, I need to follow a recipe, get the feel for it, and then if I feel the urge to do so, I'll work it around.
