Bacon & oats.

Bacon & oats.

Been improvising with oats - should work ok:

4 ounces of porridge oats
4 rashers of bacon, diced
1 large, spicy onion, sliced
salted butter - not too much, there's the baco fat. More or less 1 largeish chunk.
3 chilli peppers, sliced or whole if ya wanna take em out
black pepper coarsely ground
red thai curry paste
small can of coconut milk
2 eggs
water

toast the oats in a frying pan with butter for c. 2 minutes with the pepper.
stir fry the onion, bacon and chilli paste (mix the paste with 4 tablespoons of water first so it permeates well) into the oats. When the oats have absorbed the liquid, stir fry the eggs and diced chillies in until the texture is firm and the fry is dry.

Test the oats for consistency - should be a bit hard in the centre.

Add a few sloshes of coconut milk, depends on how you're winging it, and simmer down until the mix is firm and the oats chewy but no longer hard.

Hey presto! Scothai breakfast!

Try it n see! The idea is to get the oats' texture a bit like that of fried rice. So need to get the large ones, not the ground up ones.

Inspired by the ancient habit of porridge with a bit of salt instead o' sugar.

You can replace the bacon with chicken if you want.

Sorry, but I'm happy with steel cut oats an d a wee sprinkling of salt!
If you want to try savoury, make some oatcakes (braw wi a wee bit cheese), or skirlie.

Oh, the bacon is no bother, but if I ever try that, there will be a distinct lack of chilli peppers and curry. But that's just me.

It sounds awful..chillies....coconut milk...curry and bacon !!!!

Spiced onion....I like white onions !

Porridge oats not as good as oatmeal

Having dissected your recipe for things I like I am left with water butter and eggs.....ooooohhhh omelette for me
