Vegan-Friendly Chocolate Cake
At last I'm getting round to posting this. This delicious, moist chocolate cake always gets a good response from those who try it. Enjoy!!
3 cups flour 4 tsp baking powder 2 cups sugar 1 tsp bicarbonate of soda 1/3 cup cocoa pinch of salt 2 cups boiling water 1 cup oil 2 tsp vanilla essence 50 ml white vinegar 27 cm x 39 cm baking pan Sift dry ingredients together in a large mixing bowl. Mix the liquid ingredients together separately and then slowly pour over the dry ingredients while gently stiring with a fork (if you pour too fast it may bubble over). After mixing with a fork, mix well with a beater. Pour batter into pan. Bake at 180 degrees Celsius. Time may vary, I usually just wait until you can smell it and then prod it with a knitting needle to see if it is done. Its a pretty flat cake that serves many. Ice as you like (sometimes i don't even bother icing it). VERY YUMMY |

I suppose you could sub in buttermilk of you were opposed to the vinegar but that would change it from vegan I bet.
Lemon juice could probably be subbed in as well, something acidic to react with the sodas.
