Easy Vegetarian

I'm trying to remember what a zucchini is called in the U.K.... anyone remember?

zucchini quesadillas (recipe is for 2 quesadillas to serve one person)

2 tsps butter
2 tsps water
1 vegetable boullion cube (or 1/2 tsp salt and herbs)
2 small zucchini, sliced

4 tortilla wraps (wheat)
1 chopped tomato
1 cup grated smoked cheddar (about 2 oz)

Heat butter and water together in small saucepan. Add the boullion cube and disolve. Add zucchini and saute until just soft.

Quesadillas can either be melted in the microwave or in the oven. Place one tortilla on an oven safe plate. Place half the zucchini in a single layer on the tortilla. Sprinkle with half the tomato and half the cheese. Place a second tortilla on top. Repeat for second quesadilla. Heat in microwave for one minute or in a medium oven until cheese melts.

Do folks in the UK have to lock their car door at zucchini harvest time or aren't there any sneaky courgette growers who will break into your car and load you up with their excess that everyone else is tired of? heeheehee

Maybe, I need to explain? Around here, it is so easy to grow and so prolific that everyone gets way more than they can use. . . everyone who grows it is trying to give it away to everyone they know, mostly those who also grow it. No one really needs to lock their cars to keep them safe, but the running joke is to lock your car doors or you'll come back to it to find it's been over loaded with zucchini! Be assured, if someone spies a stranger messing about with your car, they will do something about it but if they spy someone 'giving' you a load of zucchini, you are on your own! LOL

Nawwwwwwwwwwww, think we just buy them in the shops, there could be a few people who grow them
but for me they can keep them...lol

Nope, it is generally hard enough to grow a good crop of them & keep the bugs off anyway.

They grow prolificly here, too. I've had large piles of vegetables (usually zucchini, summer squash, tomatoes and eggplants [aubergines]) ....left on my doorstep in the dead of night with no indication of who left it.

I need some good bean recipes! ....i am going to teach a friend how to cook and they are trying to slim. I think they've been eating a rather typical American diet... with way too much meat, white flour, and sugar. They usually have Pop-Tarts for breakfast, and a fast food burger for lunch, etc. They think they can lose weight the portion-control way, and they probably can, but it makes me shudder to think how few vegetables and fiber they are getting.

Anyway... any ideas?
