Fresh Pineapple Ice Cream

One way of saving fresh pineapple when its a wee bit too fresh !!

Take the flesh out and chop into really tiny pieces and freeze but just before its frozen solid try
and separate into the pieces.

Take a carton of Plain Ice Cream and put in larger one and add the pineapple and stir well, leave in
freezer at least 24 hours !!

I suppose that any ripening fruit can be used but I like pineapple !!

How dare you suggest that to a vegetarian...

I did find that strawberries go to mushy when frozen so added them fresh to the ice cream !!

I thought that pineapple was the only fruit that couldn't be used in ice cream because it has enzymes which prevent the cream from solidifying. It might be a different fruit I am thinking of though

Pineapple and papaya are the only foods where the complete enzyme needed to digest meat (including dairy) occurs naturally.
