Question Scottish Dessert

HI,

This summer when I went to Scotland, we had a great dessert called crannocin (I have probably spelled it wrong) It was like a whipped mousse dessert with raspberries and I think oatmeal. Does anyone have the recipe? I hope I got the name right.

Hiya... it's called cranachan.
I've never made it before, so just googled the recipe and came up with this one, amongst others:

Thanks! I just checked out the recipe. I am going to try and make it. I know when I was on my trip that it did not have the whiskey in it. I traveled with a group of 12 year olds, so I don't think they would put it in there, or maybe they did, but I don;t know.

I dunno... the whisky is an integral part of the dish. I doubt they would make it without the whisky!
I suppose it depends on where you had it... i cant imagine a chef compromising his recipe because of the age of his customers!

No, you're right, Lithgae - cranachan has to be flavoured with whisky, or it isn't the 'real' thing.

BTW, MsTink - Scottish whisky is spelled without an 'e' - only American and Irish whiskey has the 'e'!

Polwarth-Sorry about the "e"

Well, then maybe they did put in the whisky, but that night the whole restaurant was filled with different groups all traveling through people to people so they were all under age except for the teachers. I will have to see if it tastes the same.

Here's my family recipe for cranachan

2 oz medium oatmeal (not porridge oats, the proper steelcut stuff!)
10 fl oz fresh double cream
3 tablespoons heather honey
3 tablespoons good whisky.
12 oz fresh raspberries

Toast the oatmeal under a grill, turning occasionally with a spoon, until it is golden brown. Allow to cool.
Whip the cream until stiff and then mix in the honey, whisky and oatmeal.
Layer the raspberries with the cream mixture in four tall glasses, cover with cling film and refrigerate.
Allow to come to room temperature for 30 minutes before serving and then decorate with a few raspberries.
