i like it SPICY!!!!!!!!!!!!!!



...the guy who owns the knitting store where i teach asked me this afternoon if i liked spice, and he handed me an open jar of homemade sauce. I put only about 1/8th tsp to my mouth.... now keep in mind, there are few people who can match me for heat tolerance, and if they can surpass me, they are truly insane. Anyway, it tasted great... hot.... that's expected.... okay, it's getting hotter.... not bad!..................... and then it HIT!!!!!! WOW! I spent my early years in Mexico, so if something nearly blows MY head off, trust me!.... it is VERY VERY HOT!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

It had Jabaneros and other hot peppers, with brown sugar and a few other ingredients... almost like a chutney, only stronger. It was good, but like all of the super spicy, i felt my sinus glands go into shock and my eyes started watering! 20 minutes later i could still taste it! It did not seem like mere jabaneros! Grown in his friend's back yard, he had to admit they are stronger this year. Anyway, he's going to bring me the jar and the recipe.... i loved the brown sugar added!

I grew up in Southern California, so i like it spicy too, but my Scottish husband is even more chilli-tolerant than i am! He's not happy with the spice levels until he has beads of sweat on his forehead and a runny nose...

I've been thinking of throwing a HEAT party.... no spice wimps granted admission. I'll call the neighbors, tell friends, but ONLY those people with high spice tolerance invited, and i'll make it an international potluck.... Mexican, Szechuan, Indian, etc.... only spicy dishes.... i think it would be a BLAST.

Dont forget the HUNAN!!
OMG... the hunan smoked ham at Brandy Ho's in San Francisco.... smoky ham with lots of dried red chilli!

oooo that sounds goooooood!!!

Kung Pao Chicken was always one of my favorites.... made with peanuts and whole red chilis... but it's hard to find it made the right way anymore.

Kung Pao was always one of my favourites growing up in California.
They dont have it here in the UK... you might see something on Chinese menus called 'Kung Po', but rest assured it is not the same... nowhere near as spicy as it should be!

It shouldn't be hard to make if we can just figure out the sauce. Wok cooking always goes quickly, it's just the chopping of the vegetables that takes time.
