Curry recipes

I make a curry rice dish thet we love and a friend shared her curry chicken recipe with me so I thought a Curry thread would 'taste' nice!


CARNIVAL RICE

The amts. in this are approxomate, I never measure stuff, whatever looks good turns out fine!

2 cups long grain white rice. (do not use risotto as it's too creamy!)
Brown rice in a large skillett with some butter or olive oil, both work well and don't affect the taste. Add 1/4 cup each: shreded coconut, sliced almonds, coarsely chopped peanuts. Add a small can pineapple tid bits, juice included. You can use crushed as well, we just prefer the tid bits. Add the amount of curry that you like, we compromise as Randy likes it a bit stronger than I, but you have to experiment with good gurry to see what your tolerance is! Then add 1/2 cup sultanas and cover the whole mix with water. Put a lid on the skillet and transfer to a 350 degree F. oven. (moderate or 177 cel) Allow to bake untill all the water is absorbed. Test rice to see if it's done, if not add just a little more water and continue to bake a bit longer. I have no idea how long this takes as I just let it go til it's done.

Curry Chicken

Here is another one.

You will need 3 chicken breasts, cut in chunks. I understand you can use some tofu rather than chicken to make it vegi, just don't mash the tofu too small and I don't know what the equivalant measurement is.

Mix 2 cups of mayonaise with the amount of curry you like, there is no measurement here, just taste. My friend makes it pretty mild, she is teaching her children to appreciate other flavors.

Steam about 3 cups of broccoli, remove the stems and just use the flowers.

Layer the steamed broccoli in a large baking dish, cover with the chicken or tofu, spread a layer of white cheese on top and cover with the curry mixture. Sprinlkle a bit more cheese on top and bake about 45 min. at 300 deg. F (slow oven or 140C.)

This makes a good big batch so my friend takes it to potlucks or uses as a company meal. She brought it earlier this week to a school meeting/potluck and, oh my gosh, I thought I would founder on it!

Thanks Kathy! Your recipes sound so yummy!

I don't know much about cooking with curry, but I think I should learn. It has quite a few health benefits.
