Well, curried parsnip is lovely

but I expect that curried carrot soup would be really delicious as well.

Ingredients

1lb carrots (or parsnips)
2 onions
1 clove garlic
1 medium sized potato
1 pint Vegetable stock
mild curry paste
Milk or cream

Method

Finely chop onions, fry gently in butter until softened. Clean carrots, peel potato, chop finely and add to the onions with clove of garlic. Stir in a small amount of the curry paste (dessertspoonful) and mix well. Add the vegetable stock, bring to the boil and then turn down to a gentle simmer until the vegetables are tender.

Allow the soup to cool slightly and then liquidise it. Put back on the heat and add some milk or cream to taste (half a pint of milk should probably be enough.) and bring the soup up to temperature.

Garnish with either parsley or coriander and serve with some delicous home-made bread.

Hope that helps.
Margaret
