One of the basics of the Highland diet was once seaweed- obviously more on the coast than far inland. But seaweeds such as kelp, dulse, laver, sea lettuce, and carragheen.
Now these simple `poor mans` foods have been all but forgotten or banished to the healthfoods and speciality foods market, along with shellfish! There are some brilliant names for different seaweeds, such as Dabberlocks and Tangle. And seaweed was once used in just about every recipe imaginable, from soups and stews to bread and beer. |

The thing with seaweed is:
