Mint sauce to go with roast lamb?

Here's how I do it

1 large handful of fresh mint
1 pinch salt
1 tbsp caster sugar
4 tbsp boiling water
4 tbsp vinegar (I use white wine vinegar, but you can use malt vinegar, if preferred)

Strip the mint leaves away from the stalks, sprinkle with salt and chop finely.

Place into a sauce boat, add the sugar and pour over the boiling water. Stir and leave to cool.

Stir in the vinegar, tasting as you do so; add more water or vinegar to taste.

However, when there is no fresh mint available from the garden, I cheat and buy a bottle of the readymade stuff from my local supermarket

Would do but it can hard to come by in the Netherlands, especially out here in the sticks.
