Greetings from Vancouver Canada. My husband and I are moving to Edinburgh in about 6 months. I am a teacher and he is a Chef de Parti. He has been working for the Fairmont Hotel Vancouver for the last 5 years. We have some questions in regards to the hospitality industry in Scotland. Does anyone have advice on reputable restaurants/ hotels that he may consider applying for? He is looking for a challenge under a respected chef. Does anyone have any favourites? Any chefs care to respond with some advice on where to apply? How to apply? What are the hours/ pay like? Thanx for the info!

Depends where you want to live and work.
![]() For instance, there are many fine hotels and restaurants in both Edinburgh and Glasgow - but there are also many really good restaurants and hotels spread throughout the country. In Edinburgh, I like to eat at various fish restaurants in Leith and another good one is Creelers in Bristo Street - however, I think the owners ARE the chef at those establishments.
