something different with TURKEY...

okay... so we have all these leftovers now, and after a while it gets to be dull and there is STILL more turkey... so what to do?

Well tonight i wanted something to taste completely different so i made:

TURKEY PAPRIKASH

(Start by setting rice to boil)

In a large pan, saute TWO CHOPPED ONIONS in a bit of OIL.

Add about 2 CUPS CHICKEN BROTH (or turkey stock), 2 TABLESPOONS PAPRIKA, 2 CUPS (cooked) TURKEY CHUNKS, 1 CUP SLICED MUSHROOMS. Simmer about 10 minutes.

Mix about 1 TABLESPOON CORNSTARCH (or flour) in half a cup water, and pour gradually into turkey paprikash while stirring constantly until sauce is thickened. SALT to taste.

When rice is ready, reduce heat on paprikash mixture to below simmer and add in about 1 CUP SOUR CREAM. Stir well and serve over hot rice.


Tomorrow night i think i'll make a curry. I'd love to hear more suggestions of what to do with leftover turkey!

Not going to be much help here but thought I would just let you know that
the leftover turkey that hubby doesn't want the cat gets....lololol
