I'm cutting up the Jack-o-lantern today, it's still fresh. What could i make with it other than pumkin pie?

Yes, i was thinking of a soup... and maybe make it very rich with heavy cream and butter... mmmmmmm!

And there is so much of it, i also thought i'd make some homemade pumpkin ravioli. I used to have a recipe for it somewhere... i've never made it myself (though i've made other kinds of ravioli) but a friend of mine once made it for me and it was so good i asked for the recipe... only now i can't find it, of course!

Thumbs up How about roasting the seeds?

I hope you roasted the seeds. They're amazing....nice and crispy...done in butter with a bit of sea salt...mmmmmm!

oh of course i roasted the seeds! i made them two ways... one just with sea salt and the other with cajun spices, mmmmmmm! They didn't last long.

I had pumpkin butter once, yummy yum! But I don't have a recipe for it.

Here is my recipe for Pumpkin Soup!

For a vegi soup leave out sausage and substitute vegi stock for chicken stock.

Brown 1 pound of Italian sausage, drain fat and set aside. In a stock pot, melt 3T butter, not margarine, and add enough flour to make a stiff roux. mix in 2 cups chicken stock and salt and pepper to taste. Heat till thick and add cooked sausage, 2 cups cooked and mashed pumpkin. At this point you may choose to dress it up with grated carrot, cooked pasta, onion, green pepper, or for a sweeter taste, try cocoanut and raisins. Heat till very thick and add 1 cup heavy cream. heat through and serve. This is addictive and filling!

You can always just roast the pieces with salt and a little olive oil or butter. Use it just like any other squash.
