This came up in another thread and I thought it warrented it's own thread as this is just so good! Thanks wee scamp for posting it!

Clootie Dumpling

A clootie dumpling is a pudding which is boiled in a cloth (cloot), a plain white pillowcase is ideal.

Recipe

NOTE all weights/measures are imperial!

Clootie Dumpling

Ingredients

8oz Self Raising flour
1 tsp mixed spice
1 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp sea salt
6oz caster sugar
4oz shredded suet
4oz sultanas (aka Golden Raisins)
6oz raisins
1 apple, coarsely grated
1 tbsp black treacle (aka Dark Molasses in the States)
1 medium farm-fresh egg
5fl oz milk

Method

1. Sift the flour, spices and salt into a bowl and stir in the sugar, suet, dried fruits, and the grated apple.
2. Mix the black treacle with the egg and some of the milk and mix into the dry ingredients to give soft mixture with a cake-like dropping consistency.
3. Drop a large piece of muslin, an old pillowcase, a pudding cloth or a tea towel into a pan of boiling water for a couple of minutes, remove it and squeeze out the excess water. Lay it out on a surface and sprinkle a 12in circle in the centre with 1oz of flour and 1 tbsp of caster sugar (AKA Bakers Sugar or Confectoners Sugar works). Spoon pudding mixture on to centre of the cloth, bring up the corners and tie securely with string, leaving a little room for the pudding to expand.
4. Rest a large heatproof trivet or container in the base of a large pan so that the pudding is not in direct contact with the heat. Place the pudding on the trivet/container, knotted side up. Pour in enough water to almost cover the pudding, cover with a tight-fitting lid and simmer gently for 3-4 hours. Take a peek every now and then and then to check the water level and top it up with boiling water if necessary.
Lift the pudding out of the pan and place in a collander, dip it in a bowl of cold water for about a minute (to release the cloth).
Untie the cloth and peel it off the top of the pudding, place a plate on top and invert the colander and pudding, remove the colander and then gently remove the cloth.
The pudding will have a skin on it – this is intentional - which you eat as part of the pudding.

** OPTIONAL **
Slide it into a preheated oven (180C/350F/Gas 4).for 5 minutes until the outside of the pudding has dried off.

This pudding is very versatile, eat it hot with home made custard or double (thick?) cream or ice cream flavoured with Drambuie (YUM! YUM!). You can eat it cold like cake, and you have got to try a slice fried with your bacon and eggs for brekkies!- delicious.

My Grannie used to make this clootie dumpling that was out of this world. She died a few years ago and took this recipie with her, such a sad loss. I miss my Grannie as well.
