For all of you willing to talk about your personal favorite comfort food. Post here. I will tell you what I find as comfort food. What my family likes, and what I know about making my favorite comfort food. WARNING. I come from a tropical culture....so I might mention some exotic fruits and vegetables. Don't know if they are available in Scotland or not. But I am sure in London they have it, since it is an international food mecca.

Let's go....

The staples....good old rice and beans.

The rice is steamed white rice, with a little salt and a bit of olive oil to keep the rice grains from sticking together too much.

The typical beans are these....

Puerto Rican Pink Beans (Habichuelas Rositas Guisadas)

In a sautee pan and after blending these ingredients together sautee for a few minutes and then add to boiled and soft pink beans that are completely cooked.

Sofrito (the sauce to add to the beans)

1 yellow onion medium to large
Two tablespoons of Extra virgin olive oil
1 can small of tomato sauce
green bell pepper medium
1 red bell pepper
cilantro to taste about 3 tablespoons
olives (green stuffed) about 5.
3-4 cloves of fresh peeled garlic
some saffron powder one envelope (if not available or too expensive substitute achiote seeds boiled in peanut oil for a couple of minutes and add a teaspoon to sofrito)
some Chinese pumpkin in medium sized diced cubes....
for the ham lovers...add a little diced ham
Sautee and add to beans cook.

Serve the rice and beans with baked or fried plantains...and a fresh salad.

This is very good with baked chicken in Seville bitter Orange juice and your typical adobo and mojito....

OH COMFORT FOOD.....hey, if you want the healthy lower calorie version or vegetarian version...let me know. I know those too!! And you can do it with instant brown rice if you prefer and or regular boiled brown rice too....The vegetarian version I make is very interesting and so delicious!!

Ok PR I have some questions for you....

What are

Puerto Rican Pink Beans
and
Sofrito
and
cilantro
and
Achiote seeds

You say you have a good vegetarian version, I am wondering
how
you would manage to feed me as I am a fussy eater so I am told.

I don't like
Olive OIl
Red Peppers
Pumpkin
Olives of any colour !!
Peanut Oil
BEANS !!!!!
Brown Rice !!


Looking at that list maybe I am fussy....lololol

Can't help with the rest of the list but Cilantro is a green herb used to flavor salsa and such, it's pretty good stuff! (chop it up with fresh tomatoes, sweet onions, peppers (if you like them), garlic and lime juice, eat with tortillia chips, ummmm!)

Comfort foods:
Chocolate!
Ice Cream
Coffee
Toast with honey
Cherios with strawberries
Fresh peaches
Applesauce warmed up with a bit of nutmeg and cream
(some of these, like the toast and applesauce, were things my Mom made us when we didn't feel well, maybe that's why they are comfort foods?)
