1.5 pounds of flank steak, about 3/4th inch at the thickest part.

One head of garlic, cloves separated and removed of most of the excess paper skin. No need to completely peel.

Two shallots. Same as the garlic.

Two sprigs of rosemary, needles removed from stems which you discard.

Two tablespoons good quality extra virgin olive oil.

One tablespoon water.

S&P

Put it all in a heavy-duty tin foil pouch, wrapped tightly so it doesn't leak and cook in oven for 20 min. at 350 degrees.

Remove contents to food processor or blender. Add one cup extra virgin olive oil. A tad more S&P. Blend thoroughly.

Put flank steak in shallow dish, cover completely with marinade. Refrig. for two hours or overnight, turning once.

Turn grill up to high (or use BBQ) and grill seven minutes on both sides. Let rest for 10 minutes before cutting. Cut AGAINST the grain. Grill up some portabellos, onions, zucchini, whatever.

This sounds good, I will have to try it but with out the rosemary as it upset my system!

You'll really enjoy it.

Just remember to peel the garlic and shallots before you add them to the blender. I forgot to say that.
