As I read this, I'm sitting at my B&B in Glasgow. Yesterday and probably today, will be scrambled eggs and beans. My SO has some kind of meat, bacon and/or sausage. toast. Available is yogurt and a basket of cheeses. All kinds of cold cereal. I'm surprised there is no porridge, I was looking forward to that. No broiled tomatoes at this place.

WOT?! White pudding does not have any meat in it! (apart from the suet). Nor does it have breadcrumbs! Or all those weird spices! (i say 'weird', cos ive never knowingly eaten marjoram in my life!) This is the usual / most common recipe for white pudding:

1 pound (450 g) of beef suet shredded
2 pounds (900 g) of medium oatmeal toasted in the oven
4 medium onions finely chopped
Pudding skins (available from butchers)
Jamaica pepper (allspice)
Salt

Forgive my ignorance, guys, but what exactly is suet?

Suet?
It's like a hard/dry animal (usually beef) fat. You buy it shredded and packaged.
